Kosher for Passover Almond Cookies

Ingredients
  

  • 2 large egg whites
  • 4 cups brown sugar
  • 3 cups almond flour or finely ground almonds
  • Pinch of salt

Instructions
 

  • Preheat oven to 350 degrees.
  • In a mixer, whip the egg whites with the sugar until the mixture is white and fluffy. Add almond flour and salt. Mix until a sticky dough is formed. Cover the bowl and refrigerate for 20 minutes.
  • Put parchment paper on a baking sheet.
  • From the cooled dough, create small balls and place on the baking sheet. Leave room between them.
  • Cook 15-20 minutes. The cookies are ready once they are evenly golden.
  • Take them out of the oven and cool down for 20 minutes.
