Warm up the oven to the lowest temperature, by turning it on for 5 minutes and then turning it off. This will make the oven into a warm box where the focaccia can proof quickly.
Mix water, sugar, and yeast with a spoon in a mixing bowl and let it sit for 5 minutes.
Add the rest of the dough ingredients to the bowl and mix on low speed until combined. Without a mixer, use a wooden spoon and then work the dough with your hands on the counter.
Create a smooth ball shape and press it down to make it as flat disc, the size of your round 8-10-inch baking dish.
Place the dough in a greased round baking dish (I like cast iron, but any dish will work), cover with a kitchen towel and place in the warm oven, for 20 minutes.
Remove from the oven and heat the oven to 400F.
Spread the olive oil mixture on top of the dough and press with your fingers to create the iconic dents.
Bake at 400F for 20 minutes.
Take out and cut the focaccia bread to 8 slices.
