Peel and dice apples and set aside.
In a bowl, add the wet ingredients and sugar in intervals with mixing in between.
Add dry ingredients into the wet ingredients ⅓ cup at a time with mixing in between.
Use two loaf pans lined with parchment paper, pour a thin layer of batter, spread the chopped apples, pour the rest of the batter to cover the apples. Run a back of a spoon in the batter and bake at 325° for 40-54 minutes until the middle of the cake is firm.
