4-5cupsshredded Brussels sprouts (shred your own or buy pre-shredded)
1cupGreek yogurt
1cupshredded cheese (any)
1 1/2teaspoonssalt
Pepper
1/2teaspoonbaking powder
1/2cupfeta cheese to crumble on top before baking
Instructions
Add all the ingredients except feta cheese in a mixing bowl and divide into parchment paper muffin cups for easy clean up. As an option, you can bake the mixture in a baking dish instead of muffin tin and serve it as a quiche.
