Brussels Sprout Muffins

Ingredients
  

  • 8 eggs
  • 4-5 cups shredded Brussels sprouts (shred your own or buy pre-shredded)
  • 1 cup Greek yogurt
  • 1 cup shredded cheese (any)
  • 1 1/2 teaspoons salt
  • Pepper
  • 1/2 teaspoon baking powder
  • 1/2 cup feta cheese to crumble on top before baking

Instructions
 

  • Add all the ingredients except feta cheese in a mixing bowl and divide into parchment paper muffin cups for easy clean up. As an option, you can bake the mixture in a baking dish instead of muffin tin and serve it as a quiche.
  • Crumble feta cheese on top.
  • Bake at 350° for 30 minutes.
