In a food processor mix all the ingredients except for the tea biscuits, until combined to a coarse ‘dough’ like mixture.
Transfer to a mixing bowl.
Crush one package of tea biscuits, using your hands and mix them with the rest of the ingredients just until evenly distributed.
Sprinkle shredded coconut on parchment paper and transfer the chocolate and dates mixture on top.
Coat the chocolate-dates mixture with shredded coconut and use your hands to make the mixture into a log shape. Sprinkle shredded coconut as needed to prevent the mixture from sticking to your hands (about 3-4” thick).
Wrap well with parchment paper and plastic wrap and freeze for a minimum of two hours.
Remove from the freezer and cut into 1/2” slices.
