Recipe: Chocolate Date Salami

Chocolate Date Salami

Ingredients
  

  • 2 cups dried dates and/or figs, soaked in water for 20 minutes, pitted
  • 1/2 cup cocoa powder
  • 1/2 cup shredded coconut
  • 1/2 cup almond meal
  • Pinch cinnamon
  • Pinch salt
  • 1 sleeve tea biscuits (4 ounces)
  • 1/3 cup shredded coconut, for dusting around the salami

Instructions
 

  • In a food processor mix all the ingredients except for the tea biscuits, until combined to a coarse ‘dough’ like mixture.
  • Transfer to a mixing bowl.
  • Crush one package of tea biscuits, using your hands and mix them with the rest of the ingredients just until evenly distributed.
  • Sprinkle shredded coconut on parchment paper and transfer the chocolate and dates mixture on top.
  • Coat the chocolate-dates mixture with shredded coconut and use your hands to make the mixture into a log shape. Sprinkle shredded coconut as needed to prevent the mixture from sticking to your hands (about 3-4” thick).
  • Wrap well with parchment paper and plastic wrap and freeze for a minimum of two hours.
  • Remove from the freezer and cut into 1/2” slices.
