Chocolate Date Salami
Ingredients
- 2 cups dried dates and/or figs, soaked in water for 20 minutes, pitted
- 1/2 cup cocoa powder
- 1/2 cup shredded coconut
- 1/2 cup almond meal
- Pinch cinnamon
- Pinch salt
- 1 sleeve tea biscuits (4 ounces)
- 1/3 cup shredded coconut, for dusting around the salami
Instructions
- In a food processor mix all the ingredients except for the tea biscuits, until combined to a coarse ‘dough’ like mixture.
- Transfer to a mixing bowl.
- Crush one package of tea biscuits, using your hands and mix them with the rest of the ingredients just until evenly distributed.
- Sprinkle shredded coconut on parchment paper and transfer the chocolate and dates mixture on top.
- Coat the chocolate-dates mixture with shredded coconut and use your hands to make the mixture into a log shape. Sprinkle shredded coconut as needed to prevent the mixture from sticking to your hands (about 3-4” thick).
- Wrap well with parchment paper and plastic wrap and freeze for a minimum of two hours.
- Remove from the freezer and cut into 1/2” slices.
