On a flat plate, mash the banana until almost smooth. Set aside.
Combine the chocolate chips and coconut oil in a glass bowl and microwave for 1 minute. Remove, and mix well until smooth. Set aside.
In a large mixing bowl add the eggs and sugar and whisk until a slightly light color appears.
Add the mashed banana and mix together until combined.
Add the melted chocolate chips mixture and mix.
Add the cocoa, baking soda, and almond meal and fold them in until combined. Don’t over work the mixture.
Transfer the batter to an 8”x8” baking dish lined with parchment paper, and garnish with chocolate chips and two pinches of coarse salt (kosher or Himalayan).
Bake at 350° for 25 minutes.
