Separate the eggs and place in two separate bowls.
Mix the flour, baking flour, and salt in a small bowl.
Using a handheld or standing mixer, whip the egg whites with the sugar until it comes together and forms soft peaks.
Leave the mixer on low speed and add the yolks; mix just until combined.
Add the rest of the ingredients in the order they appear (starting with the olive oil, etc.) while the mixer is on low speed. When adding the flour, add 1/2 cup at a time.
Grease a Bundt cake pan with spray or olive oil, pour the batter into the pan and bake at 325° for 45 minutes.
Remove from the oven and let cool.
Use a knife or silicone spatula to separate the walls of the cake from the pan.
Place a plate on top of the pan and flip the cake over. Sprinkle with powdered sugar and enjoy!
