Fluffy Orange Cake

Ingredients
  

  • 7 eggs, separated
  • 1 cup sugar
  • 1/2 cup mild olive oil
  • 1 cup fresh orange juice, with pulp
  • Orange zest
  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • Pinch salt

Instructions
 

  • Separate the eggs and place in two separate bowls.
  • Mix the flour, baking flour, and salt in a small bowl.
  • Using a handheld or standing mixer, whip the egg whites with the sugar until it comes together and forms soft peaks.
  • Leave the mixer on low speed and add the yolks; mix just until combined.
  • Add the rest of the ingredients in the order they appear (starting with the olive oil, etc.) while the mixer is on low speed. When adding the flour, add 1/2 cup at a time.
  • Grease a Bundt cake pan with spray or olive oil, pour the batter into the pan and bake at 325° for 45 minutes.
  • Remove from the oven and let cool.
  • Use a knife or silicone spatula to separate the walls of the cake from the pan.
  • Place a plate on top of the pan and flip the cake over. Sprinkle with powdered sugar and enjoy!
