Cut watermelon into rough cubes. In a blender, combine watermelon, sugar, fresh lime juice, arak, mint leaves, vanilla paste and salt. Blend into a smooth and unified mixture.
Pour into a metal baking dish and carefully transfer to the freezer.
Scrape mixture every 30 minutes. Do this 4 or 5 times.
Keep the granita in the freezer until it is time to serve.
Top granita with sugar coated lime zest, crumbled feta cheese, fresh mint leaves and/or balsamic vinegar reduction.
