Watermelon–Arak Granita Topped with Fresh Lime Zest, Mint Leaves and Crumbled Feta Cheese

Ingredients
  

  • 2.2 lbs. watermelon
  • 1/4 cup sugar
  • 2 tbs. arak or any other preferred alcohol
  • 1/4 cup lime juice fresh (2 limes)
  • 1 tsp. vanilla paste/extract
  • 1/4 cup mint leaves fresh
  • 1/4 tsp. salt

For plating:

  • lime zest plus 2 teaspoons sugar
  • feta cheese
  • reduced balsamic vinegar
  • mint leaves fresh

Instructions
 

  • Cut watermelon into rough cubes. In a blender, combine watermelon, sugar, fresh lime juice, arak, mint leaves, vanilla paste and salt. Blend into a smooth and unified mixture.
  • Pour into a metal baking dish and carefully transfer to the freezer.
  • Scrape mixture every 30 minutes. Do this 4 or 5 times.
  • Keep the granita in the freezer until it is time to serve.
  • Top granita with sugar coated lime zest, crumbled feta cheese, fresh mint leaves and/or balsamic vinegar reduction.
