
Watermelon–Arak Granita Topped with Fresh Lime Zest, Mint Leaves and Crumbled Feta Cheese

Ingredients
- 2.2 lbs. watermelon
- 1/4 cup sugar
- 2 tbs. arak or any other preferred alcohol
- 1/4 cup lime juice fresh (2 limes)
- 1 tsp. vanilla paste/extract
- 1/4 cup mint leaves fresh
- 1/4 tsp. salt
For plating:
- lime zest plus 2 teaspoons sugar
- feta cheese
- reduced balsamic vinegar
- mint leaves fresh
Instructions
- Cut watermelon into rough cubes. In a blender, combine watermelon, sugar, fresh lime juice, arak, mint leaves, vanilla paste and salt. Blend into a smooth and unified mixture.
- Pour into a metal baking dish and carefully transfer to the freezer.
- Scrape mixture every 30 minutes. Do this 4 or 5 times.
- Keep the granita in the freezer until it is time to serve.
- Top granita with sugar coated lime zest, crumbled feta cheese, fresh mint leaves and/or balsamic vinegar reduction.
