Recipe: Citrus Kale Salad

A combination of orange and lemon give this kale salad a citrus edge, while blueberries add extra flavor and freshness.

Citrus Kale Salad

Ingredients
  

For salad:

  • 1 bunch kale or a bag of pre-cut kale
  • 1 orange, peeled and diced
  • 1 cup blueberries, halved
  • 1/2 lemon, juice
  • 3 Tablespoons olive oil

For dressing:

  • 1 lemon, zest and juice
  • 1 orange, zest (use the zest from the orange you diced)
  • 2 teaspoons minced ginger
  • 2 Tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 Tablespoon maple syrup

For garnish:

  • 1/2 cup blueberries

Instructions
 

  • To make dressing, combine all ingredients and mix well. Set aside.
  • For the salad, fill up a bowl with bite size pieces of kale and remove the tough stems.
  • Drizzle 1 Tablespoon olive oil and lemon juice from 1/2 lemon on the leaves and massage them with your hands.
  • Add the blueberry halves, diced oranges, and dressing. Toss lightly.
  • Garnish with 1/2 cup blueberries and serve.
