Crunchy Broccoli Salad
Ingredients
- 1 head broccoli
- 4 celery stalks
- 2 carrots
- 1/2 purple onion (or 1 small onion)
Add on top:
- 1/2 cup roasted cashews
- 1/2 cup dried cranberries
For the Dressing:
- 1 lemon, juice only
- Salt and pepper
- 1 Tablespoon olive oil
- 1 Tablespoon mayonnaise
- 1 Tablespoon honey
Instructions
- Dice the broccoli, celery, carrots and onion into tiny cubes and add them to a salad bowl.
- Mix dressing well and pour all over the veggies. Toss well.
- Add the cashews and cranberries on top and serve!
