Course Breakfast & Brunch, Side

Ingredients

  • 1 cup oats (processed to a meal)
  • 1 cup whole oats
  • 1 cup cottage cheese (fat free or with fat)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Everything bagel seasoning for topping

Instructions

  • Add 1 cup of whole oats to a food processor and process until it becomes a meal, not powder consistency.
  • Add the second cup of whole oats and the rest of the ingredients.
  • Mix everything in a food processor, until blended well so that no chunks of cottage cheese can be seen.
  • Transfer to a pan lined with parchment paper and shape it into a bread-like log. Work with wet hands.
  • Sprinkle with a generous amount of Everything Bagel seasoning.
  • Bake at 350° for 40-45 minutes until golden brown. Let cool completely.
  • Slice and enjoy plain or with your favorite spread! Each slice will contain protein and fiber and keep you full for hours!

Notes

We are using 2 cups of oats; one cup will be processed to a meal consistency, and the second cup will remain as whole oats.
