Honey Cookies

Ingredients
  

  • 1 egg
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 2 Tablespoons sugar (or brown sugar)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt

Instructions
 

  • Mix the first 6 ingredients until all ingredients are incorporated.
  • Add the dry ingredients, and mix them all in. You might want to use your hands at some point as it gets harder to use a spoon. You should have a smooth dough-like mixture. Take care not to over mix.
  • Let the dough rest for 15 minutes.
  • Form 1” balls and roll them in powdered sugar.
  • Arrange on a pan lined with parchment paper and bake at 350° for 10 minutes.
  • Take out of the oven and cool.
