Tomato Tortellini Soup

Course Soup

Ingredients
  

  • 1 can peeled Italian tomatoes
  • 1 package cheese tortellini
  • 1/2 onion chopped
  • 1/4 cup garlic chopped
  • 1 tablespoon olive oil
  • 1/2 cup red wine
  • 1/4 cup Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 tablespoon basil
  • 1 tablespoon oregano
  • salt and pepper to taste
  • fresh basil garnish

Instructions
 

  • Sauté onion and garlic in olive oil until light golden brown.
  • Add red wine and reduce until almost gone.
  • Cook tortellini according to package directions.
  • In a blender, puree the can of Italian tomatoes. Once pureed, add tomatoes to the soup pot.
  • Stir soup and add cheese, sugar, basil and oregano. Add heavy cream last.
  • Add salt and pepper to taste.
  • Add cooked tortellini to the soup and garnish it with fresh basil.
