Recipe: Ukrainian Sweet Carrot Salad

In honor of the Ukrainian people and their courageous stand against Russia, I offer this recipe. It is also in honor of my paternal great-grandmother, Ida Simon, who emigrated from the Ukraine.

Make this delicious salad a few days in advance and serve it as a side dish at Passover (and scoop some with gefilte fish servings).

Ukrainian Sweet Carrot Salad

Ingredients
  

  • 3-4 cups shredded fresh carrots (about 8 whole carrots) using a grater, store bought or shred soft strips with a peeler

For the Dressing:

  • 3 Tablespoons lemon juice
  • 3 Tablespoons sugar
  • 3 Tablespoons regular mayonnaise
  • 1/4 teaspoons salt

Instructions
 

  • Add carrots to a large bowl.
  • Combine the dressing ingredients in a small container.
  • Pour dressing over the carrots and mix thoroughly.
  • Store in a tightly covered container in the refrigerator.
