In honor of the Ukrainian people and their courageous stand against Russia, I offer this recipe. It is also in honor of my paternal great-grandmother, Ida Simon, who emigrated from the Ukraine.
Make this delicious salad a few days in advance and serve it as a side dish at Passover (and scoop some with gefilte fish servings).

Ukrainian Sweet Carrot Salad
Ingredients
- 3-4 cups shredded fresh carrots (about 8 whole carrots) using a grater, store bought or shred soft strips with a peeler
For the Dressing:
- 3 Tablespoons lemon juice
- 3 Tablespoons sugar
- 3 Tablespoons regular mayonnaise
- 1/4 teaspoons salt
Instructions
- Add carrots to a large bowl.
- Combine the dressing ingredients in a small container.
- Pour dressing over the carrots and mix thoroughly.
- Store in a tightly covered container in the refrigerator.
