This is a great salad for any summer gathering, combining the sweet hint of peach with the tangy arugula leaves. It also makes a beautiful presentation on a table alongside BBQ meat, roasted vegetables and fresh lemonade.

Arugula and Peach Salad

Ingredients
Salad
- 6 cups arugula
- 2 peaches sliced thin
- 1/2 avocado diced
- 1 cucumber sliced thin
- 1/2 cup sunflower seeds
Dressing
- 1 lime juice only
- 2 tbs. olive oil
- 1 tbs. maple syrup
- 2 tbs. hemp seeds
- salt a pinch
Instructions
- Combine the arugula, sunflower seeds, and cucumbers in a large salad bowl or large platter.
- Mix the dressing and pour it over the greens. Toss lightly with your hands.
- Spread the avocado and peaches and toss lightly again, being careful not to break them.
