Barb’s Potato Latkes

Ingredients
  

  • 5 pounds frozen shredded potatoes (I used to peel hundreds of potatoes, until I became a little smarter and realized the frozen ones, work just fine)
  • 3 medium onions
  • 10 eggs whipped
  • 1 1/4 cups flour
  • 1 Tablespoon granulated garlic powder
  • Salt and pepper to taste

Instructions
 

  • Thaw and grate potatoes and onions together using a food processor.
  • Add the rest of the ingredients and mix. Using a small ice cream scoop, measure each latke.
  • Fry in vegetable oil on medium to high heat. Watch the latkes carefully as they can burn very quickly.
