Barb’s Potato Latkes
Ingredients
- 5 pounds frozen shredded potatoes (I used to peel hundreds of potatoes, until I became a little smarter and realized the frozen ones, work just fine)
- 3 medium onions
- 10 eggs whipped
- 1 1/4 cups flour
- 1 Tablespoon granulated garlic powder
- Salt and pepper to taste
Instructions
- Thaw and grate potatoes and onions together using a food processor.
- Add the rest of the ingredients and mix. Using a small ice cream scoop, measure each latke.
- Fry in vegetable oil on medium to high heat. Watch the latkes carefully as they can burn very quickly.
