Ingredients
  

  • 2 pounds mini yellow potatoes
  • 1 teaspoon salt
  • 1 cup chopped fresh parsley and dill

For Dressing:

  • 1/4 cup olive oil
  • 1 lemon, juice & zest
  • 1/2 teaspoon salt
  • Pepper
  • 2 garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric

Instructions
 

  • In a medium pot, cover the potatoes in water, add 1 teaspoon of salt and bring to a boil. Boil for 15 minutes and do the ‘fork test’ to make sure they are cooked all the way but not too mushy. Drain and let cool
  • Cut the potatoes in half and add to a salad bowl.
  • Add the fresh herbs.
  • Mix the dressing well and drizzle all over the salad. Toss gently, being careful not to break the potatoes.
  • Serve and enjoy!
