Golden Potato Salad
Ingredients
- 2 pounds mini yellow potatoes
- 1 teaspoon salt
- 1 cup chopped fresh parsley and dill
For Dressing:
- 1/4 cup olive oil
- 1 lemon, juice & zest
- 1/2 teaspoon salt
- Pepper
- 2 garlic cloves, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
Instructions
- In a medium pot, cover the potatoes in water, add 1 teaspoon of salt and bring to a boil. Boil for 15 minutes and do the ‘fork test’ to make sure they are cooked all the way but not too mushy. Drain and let cool
- Cut the potatoes in half and add to a salad bowl.
- Add the fresh herbs.
- Mix the dressing well and drizzle all over the salad. Toss gently, being careful not to break the potatoes.
- Serve and enjoy!
