Recipe: Winter Fruit & Nut Stuffing

There’s no doubt about it, the last two years have been difficult for all of us. Last year, many of us celebrated Thanksgiving and Chanukah with only immediate family or with those in our pods. With many of us now fully vaccinated, this holiday season promises to be a little more festive.

Winter Fruit & Nut Stuffing

Ingredients
  

  • 4 cups honey wheat croutons
  • 1/4 cup butter
  • 1/2 cup celery
  • 1/2 cup onions
  • 1 cup diced and peeled pears
  • 1/4 cup diced pitted prunes
  • 1/4 cup apricots, sliced in half
  • 1/4 cup cranberries
  • 1 cup turkey stock
  • 1 teaspoon dried sage
  • 1/2 teaspoon cinnamon
  • Salt and pepper

Instructions
 

  • Preheat oven to 350.
  • Saute onions and celery together in butter.
  • Add pears, prunes, apricots and cranberries. Cook for 15 minutes adding turkey stock.
  • Pour over honey wheat croutons.
  • Season with salt and pepper, add sage and cinnamon.
  • Bake in a buttered casserole dish for 30-45 minutes or until golden brown.
