Espresso Rubbed Salmon

Ingredients
  

  • 2 tbs. brown sugar packed
  • 1 tbs. Kona coffee finely ground
  • 1/2 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/4 cup olive oil
  • 4 5-oz. portions salmon

Instructions
 

  • Grind all dry ingredients together in a coffee grinder. Pass through a sieve to remove any lumps. Sprinkle on top of the fish and drizzle with olive oil. Bake at 350 for 12-15 minutes.
