Elite’s Crunchy Coleslaw

Course Salad, Side

Ingredients
  

  • 4-5 cups shredded cabbage (or 1 bag pre-shredded coleslaw)
  • 1 carrot shredded
  • 4-5 scallions chopped
  • 1/3 cup slivered roasted almonds
  • 1/3 cup toasted sunflower seeds

For Dressing:

  • 1/4 cup olive oil
  • 1/4 cup coconut sugar (or regular sugar)
  • 1/4 cup red wine vinegar
  • 4-5 Tablespoons coconut aminos (or soy sauce)
  • Salt and pepper

Instructions
 

  • Combine the veggies in a large salad bowl and thoroughly mix the dressing in a sealed jar.
  • The dressing can be prepared in advance and used on the salad just before serving.
  • Taste the dressing before you use it and adjust for taste, it might need more oil, vinegar, or salt.
