Chocolate Date Nut Truffles

Ingredients
  

  • 2/3 cup pecans
  • 26 soft dates pitted
  • 4 tbs. cocoa powder
  • 2/3 cup desiccated coconut
  • 1 cup desiccated coconut for rolling

Instructions
 

  • Blend pecans in food processor.
  • Add dates and blend until tiny.
  • Add cocoa powder and 2/3 cup of coconut. Blend until Sticky.
  • Scoop with tablespoon and roll gently into balls.
  • Roll in cup of desiccated coconut.
  • Refrigerate until ready to serve, can be frozen.
